New London bar offers mezcal on tap
By Lauren BowesThe Sin Gusano Project has launched Sorbito, an agave spirits tasting room and bottle shop in Stoke Newington, as the newest stop on London’s ‘mezcal mile’.

The opening comes nearly 10 years after the Sin Gusano team kicked off the city’s agave trail with pop-ups in Gillett Square and Haggerston.
Sorbito’s name comes from the Spanish phrase for ‘little sip’.
The bar features ‘state-of-the-art’ dispensing machines, usually found in wine bars but here repurposed for agave spirits. With a preloaded card, guests can sample a ‘little sip’ from a changing lineup of spirits, most sourced directly from Mexico.
Every spirit poured is available to take home either in its regular packaging or in Sorbito’s returnable 200ml bottles.
Consumers can also return any undamaged Sorbito, MAS, or Sin Gusano bottles for credit on their tasting card, encouraging circular use.
While mezcal is the main focus, Sorbito also offers beer on draft and a rotating cocktail for the week, as well as non-alcoholic options. A small selection of bar snacks, designed for drinks pairing, is also available.

Sorbito aims to be a hub for London’s agave community, with upcoming events including tastings with Gaby Moncada of Speciality Brands and Jesse Estes of Ocho Tequila, alongside collaborations with The Sin Gusano Project.
The bar will also function as a warehouse and workspace for Sin Gusano, complete with professional bottling equipment.
Small groups can also book private tasting sessions, which will be available soon.
The Sin Gusano Project has previously partnered with Kol Mezcaleria to create a line of six house mezcals and agave distillates.
