Kilchoman debuts 100% Islay Sherry Cask

Whisky maker Kilchoman has launched a Sherry cask-matured, 11-year-old single malt crafted from 100% Islay-grown barley.

The new expression follows the release of the 15th annual release of Bourbon cask-aged 100% Islay earlier this year.

Kilchoman has previously released single cask bottlings of its 100% Islay, which were aged in Pedro Ximénez and oloroso. However, the new release marks the first small Sherry cask-matured batch expression in the series, bottled for a wider audience.

The 11-year-old single malt was distilled from single-farm harvests of publican barley from the years 2011, 2012 and 2013. The barley variety was grown at Kilchoman between 2010 and 2014, producing consistently strong yields.

Kilchoman’s 100% Islay Sherry Cask Matured combines 16 first-fill ex-oloroso butts from José y Miguel Martín in Jerez, Spain.

Anthony Wills, founder of Kilchoman, said: “I’ve had my eye on these casks for a while, waiting for the perfect time to bottle them.”

Bottled at 50% ABV, the whisky showcases notes of dark fruits, spice, and smoked meat on the palate.

The limited release has an RRP of £89.90 (US$121).

Kilchoman Distillery produces two types of whisky: single malt made with commercial Scottish barley, peated to 50ppm (parts per million), and 100% Islay, made with barley from its own fields around the distillery, peated to 20ppm.

Founded in 2005, Kilchoman Distillery is celebrating its 20th anniversary this year. To mark the occasion, the distillery released four small batch single malts in May.

Kilchoman has also launched a prize draw for a unique bottling of 20-year-old single malt from its first cask, with the closing date set for December 2025.

At The Scotch Whisky Master 2025, Kilchoman took home a Master and two Gold medals.
