Edinburgh’s Bar Prince unveils Connected Icons menu
By Georgie CollinsBar Prince at The Balmoral in Edinburgh, Scotland, has launched its Connected Icons menu, which guides guests through the hotel’s history.

Connected Icons is the new story-driven cocktail menu from Bar Prince, which is described as being ‘as rich in character as The Balmoral itself’.
Launched in September, the ‘landmark’ menu celebrates the people, places, and timeless traditions that have shaped the hotel’s legacy.
Crafted by head bartender Mattia Rovaris and assistant bar manager Stefano Pinna, Connected Icons aims to offer an immersive experience, as each cocktail invites guests on a sensory journey through The Balmoral’s past.
Rovaris said: “We have created a collection of cocktails that takes you on a journey, where every sip takes you on an adventure and tells a story from the hotel’s history.”
The menu has been split into three sections: The Balmoral & Guests, Hotel Features, and Land, Loch & Sky.
Cocktails in The Balmoral & Guests section pay homage to the hotel’s ‘extraordinary’ guest list, which has included celebrated writers, Hollywood stars, and distinguished visitors, all of whom are said to have left their mark on the hotel’s history.

A highlight from this section of the menu is The Proud Scotsman, inspired by Sir Sean Connery, who famously reopened The Balmoral in 1991. This tribute to the James Bond actor blends Aberfeldy 16, Sweetdram Amaro, Drambuie, walnut bitters, and a touch of lemon oil.
Meanwhile, the Hotel Features section takes guests beyond the grand entrance, allowing them to discover the charming quirks, hidden corners, and enduring traditions that make The Balmoral truly iconic.
Inspired by the ‘heart and soul’ of the hotel itself, one key highlight is Always on Time – a serve that pays homage to The Balmoral clocktower, which is famously set three minutes fast – a tradition that ensures passengers are never late for their train from Waverley Station, which is adjacent to the hotel. Only once does it break tradition, on Hogmanay, when Edinburgh joins the world in unison to count down the New Year. This cocktail unites the un-aged X Muse Vodka with Highland Park 18 in a bid to ‘capture a moment where time stands still’.
Finally in the Land, Loch & Sky section, the natural beauty of Scotland has served as the inspiration.
This section reflects destinations highlighted in journeys curated by The Balmoral’s concierge team – from wild coastlines to serene lochs and majestic highlands.
Each cocktail captures the essence and character of these landscapes, inviting guests to explore flavours that echo the land itself, with The Glamis being an ode to Glamis Castle in Angus and the ‘luxurious’ Glamis Suite within The Balmoral.
This cocktail pairs a locally-loved whisky with a warming chilli kick, mellowed by a touch of sweetness and grounded with earthy artichoke cordial.
Guests are invited to make a reservation at Bar Prince to experience the menu. Walk-ins are also available.
