Eden Mill cuts the ribbon at new distillery
By Miona MadsenSt Andrews-based whisky and gin producer Eden Mill will officially open its new distillery and visitor centre on the banks of the Eden Estuary tomorrow (11 October).

The news follows the installation of the stills in January and the start of production at the new site in April of this year.
The multi-million-pound facility is said to combine sustainability with Scotland’s distilling traditions, creating a new destination for both local and international visitors.
Euan Kinninmonth, brand home manager at Eden Mill, said: “The vision was to create a distillery and visitor centre that would celebrate the town’s rich distilling heritage, highlighting St Andrews as a must-visit destination for spirits tourism. I’m delighted to say that this vision is now a reality. It’s a landmark moment – not just for Eden Mill, but for St Andrews as a whole.
“On a personal level, I will become the fourth generation of my family to work on the site of the old paper mill, which is a real source of pride, given I was born and raised in the area.”
Guests can participate in gin and whisky tours, purchase exclusive bottlings in the retail area, and enjoy panoramic views from The Lookout top-floor 40-seat cocktail bar.
A hands-on gin cocktail masterclass allows guests to create their own drinks. Additionally, the Cask Mastery Whisky Experience includes a chauffeur transfer to and from St Andrews and features a tour of Eden Mill’s premium collection of malts, a behind-the-scenes visit to the ‘Distiller’s Lab,’ and access to the on-site cask warehouse.
The new Eden Mill Distillery is fully powered by renewable energy and features a state-of-the-art golf simulator for guests to enjoy. This setup allows golf enthusiasts to play on The Old Course, as well as several other famous Scottish and international courses.
Visitors can purchase souvenirs at the visitor centre, which features a retail space offering the distillery’s complete range of gins and whiskies, including exclusive bottlings and locally sourced apparel.
In celebration of the opening, Eden Mill is releasing a single cask oloroso Sherry-matured whisky filled in 2016.
The release is limited to 279 bottles, exclusively available to purchase from the distillery’s retail space.
Earlier this year, Eden Mill revealed a refreshed look for its core gin range, featuring a new bottle and label design that highlights the spirit’s locally sourced botanicals.
