Dalmore unveils third Cask Curation Series edition
By Miona MadsenWhyte & Mackay-owned single malt The Dalmore has revealed The Red Wine Cask Edition as the third limited release in its Cask Curation Series.

The Red Wine Cask Edition was created in collaboration with Château Mont-Redon of Châteauneuf-du-Pape from the Rhone wine region in the Southeast of France.
First launched in 2023, the Cask Curation Series celebrates The Dalmore’s innovative approach to cask maturation. The previous two instalments in the series highlight Sherry and Port wine cask-aged whiskies.
For the third edition, The Dalmore collaborated with Château Mont-Redon and fourth-generation winemaker Pierre Fabre, a long-time partner of the distillery, to age the whisky trio.
Richard Paterson OBE, master distiller of The Dalmore, commented: “We are truly passionate about the art of cask curation, and the flavours that can be created with The Dalmore’s unique spirit, when using casks from the finest wineries and bodegas. Red wine casks have played an integral role in shaping The Dalmore’s success, so it felt fitting to release some very rare expressions as part of the Cask Curation Series.”
Château Mont-Redon’s Châteauneuf-du-Pape red wine primarily consists of Grenache Noir (57%), with Syrah (33%), Mourvèdre (9%), and small quantities of other grape varieties, including Cinsault and Vaccarèse. Over time, the wine develops a plummy and savoury character.
The third set comprises three single malts, aged 24, 34, and 43 years, all of which were not only aged in Château Mont-Redon red wine casks but also finished in 2023 vintage barrels from the same winery.
Paterson continued: “The layers of flavour from the complex grape blends held inside these Châteauneuf-du-Pape casks from Château Mont-Redon have been instrumental in the development of these three unique single malts, which have such richness and complexity.

“This has been a wonderful journey of discovery, to see how different aged and rare whiskies, can be subtly enhanced by this red wine. The three single malt whiskies within this edition of Cask Curation Series are, in my opinion, the pinnacle of red wine cask curation.”
The 24-year-old whisky is bottled at 40.7% ABV and features aromas of honey, sweet citrus, hints of orchard fruits, and delicate spices. On the palate, it reveals flavours of red berries, crème brûlée, orange zest, dark toffee, mandarin, lightly roasted coffee, and soft, exotic spices.
In contrast, the 34-year-old single malt is bottled at 40.5% ABV. It offers subtle floral aromas with hints of forest fruits, vanilla, and Seville orange. On the palate, it presents notes of dark berries, stone fruits, vanilla, honey, white chocolate, liquorice, and wood spice.
Completing the trio of whiskies, the 43-year-old Dalmore is bottled at 40.3% ABV. It presents aromas of dried fruit, orange marmalade, manuka honey, and antique leather. On the palate, it reveals flavours of forest berries, dark chocolate, honeyed mango, warming spices, dark fruit, cocoa, and a hint of espresso, along with aged wood spice.
The whiskies are displayed in a handmade lapis blue presentation case by Italian luggage maker AB Florence.
The release is limited to 150 sets and is available globally with a suggested retail price of £36,100 (US$47,750).
Earlier this year, The Dalmore launched its second edition of the Portfolio Series for the global travel retail market.
Last month, Whyte & Mackay announced that CEO Bryan Donaghey would be departing at the end of 2025.
