NAO introduces new toasting method

French cooperage New Alternative Oak (NAO) has developed a patented toasting method that naturally extracts aromatic compounds from wood and selected botanicals.

After three years of research and development, the new Grand Aroma Toasting (GAT) method provides a 100% natural way to transfer fragrant compounds into spirits, without exposure to artificial flavourings.

The patented method is said to enhance the spirit’s profile while ‘fully respecting its identity’ during the toasting process, allowing delicate aromatic diffusion.

GAT is designed for distilleries looking to enrich or explore new aromatic directions, whether through globally recognised notes or those inspired by local botanicals.

The toasting is available exclusively on new French or American oak barrels from the cooperage.

GAT was launched this year, with several distilleries in Europe, the Caribbean, Asia, and Latin America already adopting the method.

The method is being rolled out globally, targeting craft and premium spirits producers.

Founded in 2021, NAO is a family-owned cooperage located near Cognac, France. The company specialises in crafting custom barrels and designing innovative toasting techniques.
