Diistil creates gin for Middle Eight hotel

On-demand spirits platform Diistil has partnered with the Middle Eight hotel in London to create a bespoke gin in a custom bottle.

Middle Eight in Covent Garden will now offer a London dry gin in a custom-designed bottle inspired by the venue’s musical heritage, alongside a new in-room cocktail programme.

Created in collaboration with Middle Eight’s food and beverage director, Davide Valvano, the gin features a citrus-forward base of juniper, coriander seed, grapefruit, and makrut lime leaf. It also includes botanicals such as tamarind, naga chilli, oak, and cassia.

The customised spirit serves as the base for the hotel’s signature gin and tonic, as well as two house cocktails: the Sicilian Cooler and the Covent Garden Mule.

Valvano said: “I have worked with Diistil across two venues now – first at Sabine Rooftop Bar, where we created a custom London dry gin for the rooftop bar, and now at Middle Eight hotel, where the bespoke gin we developed is served across the hotel, including miniatures in our suites.

“What sets Diistil apart is its deep understanding of flavour and the needs of the hospitality industry. It’s not just producing great spirits – it is empowering venues to offer something genuinely unique, crafted to their exact vision. And it makes the whole process seamless. Suggest to everyone to go and try the ‘flavour library’ to take inspiration. Quality, speed, creativity – it has nailed all three.”

To reflect the history of Middle Eight as a former music hall, Diistil designed a bespoke bottle for the gin that incorporates details inspired by the hotel’s musical heritage.

Diistil also collaborated with the hotel’s director of rooms, Nicola Sacco, to create miniature bottles of the gin, along with rice vodka and black tea distillate. Guests are provided with a curated cocktail menu to mix their own drinks in their rooms.

To support Middle Eight’s sustainability commitments, Diistil provided much of the liquid in pouches, reducing bottle waste and lowering delivery emissions.
