Apologue debuts carrot liqueur
By Ted SimmonsChicago-based liqueur brand Apologue is expanding its line-up with a new autumn-themed expression.

Apologue Carrot was made from locally grown Nichols Farm carrots, warm baking spices, and citrus peel. The new release joins the brand’s Aronia Berry, Celery Root, Persimmon, Saffron, and Paw Paw liqueurs.
To make the liqueur, the carrots are dried, chopped, and then finally juiced.
“Carrots are uniquely interesting in that they’re incredibly familiar, yet when presented in an unexpected context, like ice cream, cocktails, or now a liqueur, they can feel playful, bold, even adventurous,” said Apologue co-founder Robby Haynes. “Their versatility excites me; earthy but bright, refreshing yet savoury, equally at home in Highballs, Spritzes and sippers.”
It is bottled at 25% ABV and available for presale for US$35 until 15 September. It will then retail for US$40 and be available in bars and restaurants in Illinois through Lagniappe Beverage, in DC through Lanterna Distributors, and in Michigan through RNDC.
Haynes spent years developing the Carrot liqueur, talking to bartenders, gauging interest and exploring complementary fruits, roots and barks. He ultimately landed on a blend of ginger, cinnamon, lemon, mint, cinchona and citrus. The resulting liqueur offers bartenders a versatile tool that pairs well with whiskey, rum, tequila, mezcal, and shochu.
Haynes and Jordan Temper founded Apologue in 2017 and went on to found Hoste Cocktails in 2021. In April, Hoste opened a production and hospitality facility in Chicago’s Pilsen neighbourhood. The 15,000 square-foot space serves as the first physical brand home for both Hoste and Apologue.
