Angelos Bafas leaves Nipperkin
By Lauren BowesHead of bars Angelos Bafas has departed the Creative Restaurant Group, where he oversaw the beverage programmes at Nipperkin, Nijū, Humo and Kioku by Endo.

Bafas was part of the group for nearly three years and is said to have played a pivotal role in shaping the group’s approach to drinks. He led the launch of Nipperkin, a bar that reflects his commitment to seasonality, craftsmanship and creativity.
Following his departure from the group, Bafas will become an independent drinks consultant and launch his own platform, Ungarnished. He plans to work with bars and restaurants to create drinks programmes that ‘balance innovation and ingredient-led drinks with a strong sense of place’.
His first project is developing the drinks concept for Kamara, a Soho bar from the founders of restaurant group Brother Marcus.
Bafas will also continue to support Creative Restaurant Group in a consultancy capacity.
Earlier this year, Bafas released his debut book, Hyper Drinks.
He commented: “Leaving Creative Restaurant Group is a bittersweet moment after such an incredible journey. I am really thankful for what we accomplished with CRG and grateful for all the people I’ve worked with.
“I’m now excited to focus on consultancy, continue sharing the ideas behind Hyper Drinks, and explore new projects that reflect my vision for the future of the bartending world, as well as focus on opening a brand new cocktail bar, coming to London’s Covent Garden this autumn.”
