Madrid’s Momus bases menu on ancestral alphabet
By Lauren BowesLed by Alberto Fernández, Momus cocktail bar in Madrid has created a new drinks list called ‘Involution. Revolution.’

The menu is the fourth from the bar, which opened in June 2022. Previous editions were based on colours, geometry and growth.
The new menu is described as a return to the bar’s roots, ‘revisiting the finest elements from their sensory and conceptual archives’.
It is divided into 10 new cocktails, 10 favourites, four non-alcoholic options and six ‘tinys’.
Each drink is represented by a primitive symbol, inspired by Fernández’s hometown of Cádiz in Spain. The city is linked with the ancient story of Gadir, where the Phoenicians first expanded the alphabet.

The ancestral alphabet is intended to convey each serve’s flavour profile. Ten profiles are spotlighted: bitter, spicy, herbaceous, floral, sweet, smoky, dry, sour, fruity and woody.
Momus takes its name from the Greek god of irony and playful criticism, with his spirit echoing through the menu.
New serves include the Residual, a riff on the Paloma that features fermented pineapple peels and strawberry tops. It is garnished with worm salt and Tajín.
Another twist on a classic is the Matcha Colada, which blends tea-infused and redistilled Takamaka rum with coconut fat-washed and clarified pineapple.
Meanwhile, Harmony offers vegetal notes of kale alongside Hibiki Harmony, Amaro Montenegro and balsamic. Other cocktails feature ‘unexpected’ ingredients, such as goat’s milk yoghurt in the Smash serve.
Other bars to launch menus this week include Sexy Fish, Experimental Cocktail Club Venice, and LuminAir in Amsterdam.
