Barcelona’s Foco debuts new menu

Led by Brits Tom Godfrey and Theo Quinn, Foco bar in Barcelona has created a new drinks list developed over 18 months.

Prior to releasing the new menu, Quinn described the bar’s style to The Spirits Business as “modernising classics”. “We follow the structure of a classic drink, but modify the making,” he said.

The new menu features 30 cocktails in four sections: seasonal drinks, Usual Suspects, bottled cocktails and alcohol-free.

The first section offers 12 cocktails that will evolve throughout the seasons. Many of the serves are based on classic cocktails, such as the Negroni, which is made with Tanqueray Gin, extra virgin olive oil, orange vermouth, coriander and mustard seeds.

The Torreador is a ‘smoky and refreshing blend’ of Banhez Mezcal, dried apricot brandy, makrut lime and smoked salt. Meanwhile, the Cosmopolitan features Ketel One Vodka, cherry blossom tea, sweet lime sorbet, cranberry and mandarin.

The Usual Suspects section of the menu features six of the bar’s most-loved and best-selling drinks. Highlights include the Espresso Martini – made with Ketel One Vodka, Giffard Café de Honduras, aerated espresso, salted vanilla foam and hazelnut – and the Picante, which blends Tequila Aluzar Blanco, the bar’s housemade triple sec, Thai chilli and cilantro.

For bottled cocktails, the team has maintained long-time favourite Foco Cola, a twist of the Cuba Libre made with Takamaka white rum, Crystal Cola, Williams pear, clarified lime and white port. New additions include the Foco Catalan, a riff on a Rickey, and the Foco Sprite, which is inspired by the Tom Collins.

Alcohol-free offerings include the White Lady, which blends Martini Floreale, mandarin and fennel seed cordial, lemon and egg whites. The Sbagliato features Martini’s other non-alcoholic expression, Vibrante, which is paired with Giffard Aperitif Bitter Alcohol Free, sesame, apple and grape bubbles.
