Danico heads to Peru with Xplorer menu
By Lauren BowesParis bar Danico has created the fifth edition of its Xplorer series, drawing inspiration from Peru’s culture and heritage.

The series first launched in 2023, with a new menu introduced every six months. The menus reflect specific regions of the world, such as Japan, inspired by the travels of Danico owner Nico de Soto.
De Soto first visited Peru in 2007, with particular inspiration coming from the country’s varying landscapes and abundant culture. To create the menu’s narrative, he drew on the country’s blend of indigenous traditions, colonial influences and modern flavours, celebrating the region’s ingredients in each cocktail.

De Soto worked with bar manager Coco Gaudin to create 12 original cocktails, which include Titicaca, which is named after the Peruvian lake. The drink features Rémy Martin VSOP Cognac, pumpkin seeds, picarones spice mix, fig leaf, pumpkin, lemon and grilled sweet potato milk.
Chicha Morada is a riff on a Peruvian beverage of the same name, which is made with purple corn. The cocktail adds Grey Goose Vodka and rectified apple juice.
Meanwhile, Leche de Tigre blends Citadelle Gin, ceviche distillate, coconut oil, lime, aji amajillo and coriander. Tupánanchiskama – whose name translates to “see you soon” in Quechua, one of the oldest languages in the Americas – features tonka-infused Bacardí 8 rum, roasted coffee distillate, arroz con leche, chancaca syrup and egg.
Earlier this month, de Soto’s pandan liqueur, Kota, launched in the US.
