Lyaness first bar to be awarded three pins
Following its launch in May this year, The Pinnacle Guide has given its first three-pin award to London bar Lyaness.
The inaugural list featured 37 bars, with 12 receiving two-pin status but none awarded three.
Speaking on The Spirits Business Podcast earlier this year, Pinnacle co-founder Siobhan Payne said she was surprised no bars were awarded three pins. The Pinnacle framework sees bars assessed on both their application form and anonymous reviews; Payne explained that, at the time, there were bars that had received three pins on one aspect, but not both.
Located in London’s Sea Containers hotel and owned by Ryan Chetiyawardana, Lyaness is known for its creative ingredients and techniques, including parallel fermentation and cryogenics.
“There was a resounding consensus from our assessors and reviewers that Lyaness embodied a meticulous, yet effortless sense of hospitality – and a commitment behind the scenes to its team that truly set it apart,” said The Pinnacle Guide co-founder, Dan Dove.
“This recognition is a testament to the incredible talent, innovation, and care that Lyaness and its team have put into their work and it’s a milestone not just for The Pinnacle Guide, but for the entire industry.”
As well as Lyaness, 19 new bars with one- and two-pin status have been added to the guide.
The new two-pin bars are:

- Fura, Singapore
- Silverleaf, London, UK
- The Cocktail Bar at The Merchant Hotel, Belfast, UK
- Silver Lyan, Washington DC, US
Silver Lyan is also led by Lyaness’ founder Ryan Chetiyawardana.
The new one-pin bars are:
- Bacchanalia, London, UK
- Bar Kinky, London, UK
- Dr Stravinsky, Barcelona, Spain
- Happy Accidents, Albuquerque, US
- Hey Palu, Edinburgh, UK
- Lab 22, Cardiff, UK
- Little Ned, New York, US
- Lucky 7, Birmingham, UK
- Otto’s High Dive, Orlando, US
- Sushi Samba Dubai, UAE
- The Dark Horse, Bath, UK
- Viajante87, London, UK
- Vesper Bar at The Dorchester, London, UK
The Pinnacle Guide added that sustainability was a significant factor in many of the newly awarded pins, highlighting Happy Accidents’ waste reduction through distilling surplus ingredients and glass elimination through in-house distillation, as well as Fura’s focus on using local, low-carbon produce.
The new pins bring the UK total to 30, the US to 16, and Singapore to four.
In the UK, 18 bars are in London, with three in Birmingham and two each in Belfast and Edinburgh.
In the US, New York and Phoenix have the most pins, with three bars each.
The next submission deadline for bars to apply to The Pinnacle Guide is 30 November.
