58 and Co creates British vermouth from waste wine
By Lauren BowesLondon-based distillery 58 and Co has partnered with boxed-wine brand Laylo to create vermouth from repurposed excess wine.

The launch is part of the brand’s Co-Lab series, which launched last year with its Olive Oil Vodka and sees 58 and Co partner with sustainable brands to repurpose byproducts.
Laylo works with wine producers across the globe, and has provided 58 and Co with some ‘past its best’ Pinot Grigio created by third-generation winemaker Arrigo Bidoli, in Friuli, Italy.
The wine has been transformed into bianco vermouth with hand-picked botanicals from the garden of 58 and Co’s east London distillery, including lemon verbena, wormwood, Egyptian lemon, cassia, orris root, cox apples and vanilla.
Bottled at 20% ABV, the vermouth retails for £29 (US$38).
58 and Co recommends serving the expression chilled over ice, lengthened with Mediterranean Tonic or in a Spritz.
The company was founded by Carmen O’Neal as 58 Gin, but rebranded in 2022 to support its expansion into different spirits categories.
It has been B Corp-certified since 2021, with its sustainability efforts including using recycled glass in bottles, creating labels from discarded grape skins and powering its stills with solar panels.
