Clonakilty debuts single pot still Irish whiskey

The new release is the first whiskey to be entirely distilled and matured at Clonakilty Distillery.

Clonakilty Distillery, located on Ireland’s southwestern coast, has announced the release of its Single Pot Still Irish Whiskey. Crafted with barley grown on the Scully family farm, the whiskey is meant to embody coastal terroir and is shaped by maritime influences like sea mist, soft rain, and ocean spray.

“We are thrilled to introduce our first Single Pot Still Irish Whiskey,” said founder Michael Scully. “This whiskey is a true reflection of our dedication to our craft, our commitment to quality, and our deep connection to the land and sea that surrounds us. It’s a spirit that tells the story of our origins, with a complexity and depth that is of unparalleled quality.”

The whiskey undergoes a fermentation lasting more than 100 hours and is triple-distilled in copper pot stills. It is matured in a combination of casks including ex-Bourbon, Amontillado Sherry, and oloroso Sherry at the distillery’s Atlantic Ocean Warehouse. The whiskey is then bottled, labelled, and packaged in-house.

“This whiskey is the culmination of years of passion, dedication, and an unwavering pursuit of excellence by our team,” said head distiller Oisín Mulcahy. “Every element – from the barley we grow to the final bottling – has been handled with the utmost care and precision. This release is more than a whiskey; it’s a celebration of our heritage, our craft, and the remarkable people who bring it to life. I couldn’t be prouder of what we’ve achieved together.”

Clonakilty Single Pot Still Irish Whiskey is slow-proofed to 46% ABV and priced at US$50. On the nose, it shows notes of vanilla, citrus peel and kiwi, while the palate delivers caramelised pear, crisp apple, dark chocolate, and orange zest.
