Tomatin debuts Sherry Collection

Highland distillery Tomatin has released a limited edition trio of single malts, called The Sherry Collection.

The new series shows the influence of different casks on Tomatin’s whisky with Manzanilla, Palo Cortado, and Pedro Ximénez (PX) butts used.

The distillery has historically used Sherry casks sourced from Jerez in Spain to mature its whisky.

However, Tomatin said The Sherry Collection has been created to celebrate modern Sherry culture, which is booming partly due to the growing tapas scene and the evolving food and drink desires of consumers.

Scott Adamson, blender and global brand ambassador for Tomatin, said: “The Sherry Collection is a nod to our past and our present; Sherry has been widely used in Scotch for decades and Tomatin’s story is no different, however, this collection celebrates our continuous experimentation, craftsmanship and desire to bring remarkable flavours to our consumers all over the world.

“The collection provides a real journey through Sherry, highlighting our cask management expertise, to deliver a mixture of expressions, all grounded with our classic Tomatin profile.”

The first whisky in the range, The Manzanilla Edition (RRP £65/US$84, 46% ABV), was distilled in 2014 and has been finished in Manzanilla butts for two years.

The aroma brings sourdough bread and salty popcorn, alongside flavours of dried fruits, chamomile tea, grapefruit, maple syrup and salted walnut.

Meanwhile, The Palo Cortado Edition (RRP £95/US$123, 46% ABV) has been finished for three years in Palo Cortado butts after being distilled in 2008.

It carries an aroma of cinder toffee and dried orange, followed by notes of milk chocolate, toasted fruit loaf and Brazil nuts on the palate.

Concluding the trio is The Pedro Ximénez Edition (RRP £150/US$194, 46% ABV), which has the longest maturation of the range at 17 years, including an eight-year finish in PX casks.

A nose of sticky toffee pudding and espresso is followed by a combination of lemon curd, golden syrup, dates, dried fig and muscovado sugar on the palate.

Each expression has been non-chill filtered and bottled at natural colour.

Earlier this year, Tomatin created a version of its 12-year-old single malt that has been aged in Sherry casks.
