Cazcabel starts production at £37m distillery

After three years in development, Cazcabel Tequila’s new £37 million (US$46.7m) distillery has begun production.

The Tequila brand initially unveiled plans to build the new distillery, located in Atotonilco el Alto in the Jalisco mountains, in July 2021.

Located in San Francisco de Asis, Los Altos, Jalisco, almost 2,000 metres above sea level and overlooking the town of Atotonilco el Alto, the new site is based near natural water springs that will be used to produce the Tequila.

Prior to the new development, Cazcabel was produced at a small family-run microdistillery down the same road. Production has now been fully transferred to the new distillery.

A visitor centre is also in the works and is expected to open later this year. The site will include a restaurant and rooftop bar, and will offer tours of the Tequila-making process.

With capacity to produce up to 23 million bottles of Tequila a year, the distillery will be pivotal in helping Cazcabel grow its global presence from 50 to 70 markets by the end of 2025.

The production facility aims to combine tradition and innovation, using three mason brick ovens that will slow-roast hand-cut agave for 26 hours. It also uses roller mills to maximise the sugar extracted from each agave, while cutting down on waste.

The distillery is also part-powered by solar panels with the aim of being fully run by solar panels and wind turbines in the future.

Production is overseen by Cazcabel’s master distiller, Yadira Hernàndez Lozana.

The project has also created local jobs, with more than 350 people employed by Cazcabel.

The distillery and brand home have been built using locally sourced materials and designed to maintain the surrounding flora and fauna.

A large courtyard at the distillery entrance has been built around an ancient tree and will act as a communal space for entertaining.

The Cazcabel range includes blanco, reposado and añejo Tequilas.

It claims to be one of the fastest-growing Tequila brands internationally.

The brand is available in countries such as the US, the UK, Australia, New Zealand, Sweden and several markets in Central Europe.
