Two Stacks unveils Pillars of Creation

Northern Ireland-based producer Two Stacks has launched Pillars of Creation, an annual release that brings together casks from three Irish distilleries.

The 2024 blended whiskey contains liquid from two of Ireland’s oldest distilleries, Dingle and Echlinville, alongside one of the country’s smallest, Killowen.

The brand said the collaborative series ‘allowed each regional distillery to showcase a sense of place and cultural identity through their whiskey DNA’.

The selected casks – Killowen Cask #004 (filled 2019, refill quarter cask ex-Bourbon), Echlinville Cask #450 (filled 2016, first-fill ex-Bourbon), and Dingle Cask 261 (first-fill ex-Bourbon) – were married together for over two-and-a-half-years in cream Sherry butts from the Jerez region in Spain.

Two Stacks co-founders Shane McCarthy, Liam Brogan and Donal McLynn said in a joint statement: “The main purpose of this release was never about maintaining the status quo; it was about starting a new chapter to script where Irish whiskey can go… Old meets new, tradition meeting innovation.

“Embarking on a journey written by the new generation of independent Irish distilleries, scripted by two of Ireland’s oldest distilleries, and one of its smallest and most authentic.”

Pillars of Creation brings notes of marzipan and orange peel, as well as dark fruit and liquorice to the nose. The taste, meanwhile, carries flavours of green apple, blackberry and peppery spice. Its finish is described as long from the pot still’s spice, and sweet from the Sherry cask.

It is available in two formats, a 700ml bottle and a 100ml can, with both in limited quantity.

The bottle (56% ABV) has an RRP of £115 (US$144), while the Dram in the Can retails for £17.50 (US$22). Both can also be purchased together in various sets.

Two Stacks opened a 6,000-square-foot Irish whiskey facility in Northern Ireland in 2022, which was the ‘first of its kind’ in the city of Newry for more than a century.

Its canned single malts, known as Dram in a Can, were ranked second in The Spirits Business‘s most innovative product launches from 2022.
