Will Meredith to lead drinks programme at Tattu

Chinese restaurant group Tattu has appointed former Lyaness manager Will Meredith to the position of head of bars.

Meredith boasts 10 years of experience in the drinks industry having previously held the bar manager position at London’s Lyaness, which was recently awarded the World’s Best Bar title at Tales of the Cocktail.

His new role will have him oversee the drinks programme across the Tattu group, taking up main residence at the London venue, which opened earlier this year.

Speaking to The Spirits Business, Meredith said: “We’re really excited to be starting on this journey and we want to showcase the next generation of Tattu bars.

“We’re pushing to level up our drinks across all sites and really build the community vibe that comes with drinking.”

Together with the team at Tattu, Meredith has created a ‘distinctive’ cocktail offering across the group, combining classic and modern techniques with a nod to ‘timeless simplicity’.

At Tattu’s London venue, The Phoenix Bar, guests can enjoy a selection of existing Tattu classics married with the bar’s new Eastern Residence Pantry menu.

The drinks list consists of eight serves inspired by the fundamental components of a Chinese pantry, using a selection of ingredients that are often used in Chinese cuisine.

Guests can expect to enjoy serves including the Oolong Old Fashioned made with oolong Sazerac rye, brown butter rum, PX Sherry, Shaoxing wine, Ancho Reyes, gomme and Bob’s Abbott’s Bitters; the Sesame Sour comprising sesame Ocho Reposado, Rémy Martin VSOP, gomme, maple syrup, lemon, miracle foamer, and Angostura; and the Yichang Rickey built with Roku Gin, lime leaf and orange mezcal, yuzu cordial, lime juice, gomme and soda.

The venue boasts ‘unrivalled’ views across the city from its rooftop location near Tottenham Court Road. It also features an outdoor terrace adjacent to the bar.

Founded by brothers Adam and Drew Jones, Tattu was first established in Manchester in 2015. The group has restaurants in Leeds, Birmingham, Edinburgh and London.

Last year, Meredith led a collaboration between Lyaness and Nude glassware.
