Bimber to release heavily charred single malt

London-based Bimber Distillery has released its second single malt whisky, which has been matured in heavily charred oak casks.

The launch of Bimber Re-charred Oak Casks whisky follows the release of The First, the distillery’s first single malt, in August this year.

The new expression has been made from a vatting of heavily charred American oak casks laid down in 2016 – Bimber’s first year of production.

The variety of American Oak casks were hand charred by Bimber’s on-site coopers to level #4 char – also known as ‘alligator char’.

The deep charring process is said to caramelise the wood sugars, adding a layer of filtering carbon to the surface of the barrel. The resulting liquid is “distinctively sweet” with “rich smooth and fruity flavours”.

On the nose, the expression has orchard fruits and spit-roasted pineapple chunks which are “sweetened” by honey, nougat and cookie dough. The palate has notes of red apples, ripe pears, banana bread and pineapple juice.

“We’re excited to unveil the next chapter in the story of Bimber,” said founder and master distiller Darius Plazewski. “The re-charred oak casks we’ve selected are the perfect match for our light, layered and accessible fruity spirit.

“We’re incredibly fortunate to employ a team of talented coopers at Bimber – this expression highlights both their passion and the importance of their traditional craft.”

Available from Friday (8 November), the initial batch (001) is bottled at 51.9% ABV and is limited to 5,000 bottles.

To celebrate its launch, every bottle of Re-charred Oak Casks pre-ordered via the distillery’s online shop (until 12pm on 7 November) will be entered into a draw to win one of the last remaining bottles of The First whisky.

Bimber Re-charred Oak Casks whisky is priced at £65 (US$84) per 700ml.
