Immigrant population inspires Singapore bar’s new menu

The Lemak Martini is inspired by Malayan dish Nasi Lemak
Flavours & Memories Vol. 3, Tasty Origins of the Five Pillars launched at the bar yesterday (21 October) and features cocktails inspired by the flavours and cultures brought to Singapore through its history of having a large immigrant population.
Created by the bar team behind Nutmeg & Clove, the menu features drinks inspired by the signature dishes and drinks from five ethnic groups that live in Singapore – Indian, Peranakan, Chinese, Malay, and Eurasian.
Singaporean Indians inspired the Masala Fizzle, which is based on the Mango Lassi and is a twist on the Ramos Gin Fizz. It is made with peated whisky, masalah whey, lemon, soda and coffee.
Peranakan cuisine inspired the Slinging Rojak, which features the flavours found in south-east Asian vegetable dish Rojak and is made with silver Tequila, rojak distillate, Cointreau, Sueze and barrel-aged Lillet Blanc.
Chinese cuisine is also represented on the menu, with the Maxwell Martini drawing its influence from Hainanese Chicken Rice and containing Hendrick’s gin, chicken rice distillate, chilli, umami and cilantro oil.
Malayan dish Putu Piring inspired the Putu Highball, which is made with Brugal rum, coffee liqueur, pandan and sparkling coconut water.
Finally, Eurasian cuisine has been represented on the menu with the Auntie Sugee, which features the flavours of the almond sugee cake and is a twist on the Old Fashioned.
Alongside each of the serves, guests can also sample the classic cocktails that inspired them, such as the Piña Colada, Vesper Martini and Milk Punch.
