St-Rémy debuts three cask-finished brandies
French brandy producer St-Rémy has added three expressions to its limited edition Cask Finish Collection, which have been aged in rum, Islay Scotch and Cabernet Sauvignon casks.

In September last year, St-Rémy launched the first bottling in its Cask Finish Collection – a brandy finished in French Chardonnay casks.
The three new expressions are: Finished in Barbados Dark Rum Casks, Finished in Islay Scotch Whisky Casks and Finished in Cabernet Sauvignon Casks.
Created by Cécile Roudaut, St-Rémy master blender, each expression is a “distinctive exploration into the encounter between French brandies and wood”.
Limited to 2,568 bottles, the Finished in Barbados Dark Rum Casks includes a maturation stage in oak casks that previously held Barbados dark rum. It will be launched exclusively in Canada.
On the palate, the brandy is described as “sweet and fruity with an ideal balance between ripe banana and toast, followed by vanilla and hot spices”.
The Finished in Islay Scotch Whisky Casks is limited to 1,968 bottles and has been matured in casks that previously held Islay single malt. It will be exclusively available in Dubai Duty Free.
It is “sweet with a gentle peatiness and hints of barley and citrus” on the nose, with “rich depth” on the palate. The nose is “strengthened by the Islay sea breeze, zest of citrus and wood”.
The Cabernet Sauvignon cask-finished brandy has been matured in French oak casks that previously held French wines made from predominantly Cabernet-Sauvignon (70%).
Limited to 6,672 bottles, the expression has notes of “red fruits, fresh butter, ginger and liquorice with a hint of pepper” on the nose with “red and black fruits and pastry” on the palate.
The Finished in Cabernet Sauvignon Casks will become available to all markets in September.
