Cotswolds Distillery bottles cask strength whisky

English whisky producer The Cotswolds Distillery has released a cask strength single malt expression, called The Founder’s Choice.

The Cotswolds Distillery has expanded its portfolio with the launch of cask strength Founder’s Choice

The whisky has been aged in shaved, toasted and re-charred (STR) casks, which were designed by the late Dr Jim Swan to optimise flavour and colour extraction from the oak and deliver an “extremely active” maturation without the need for smaller casks.

The use of STR American oak red wine barrels is said to give the whisky aromas of dark chocolate and dried figs, leading to fresh red fruits and butterscotch on the palate. The finish has flavours of spicy oak, dried fruit and nuttiness.

Bottled at 60.9% abv without caramel colouring or chill filtration, The Cotswolds Founder’s Choice is available from specialist retailers at an RRP of £64.95 (US$82).

Dan Szor, founder and CEO of the distillery, said: “We were very fortunate to work with the late Dr Jim Swan on developing our wood programme – one of his key innovations was the ‘STR’ cask and it has always been my favourite of all our casks.

“Jim’s suggestion to me was that one day we release a 100% STR-aged whisky at cask strength and, based on the extremely positive reaction from everyone that’s tried it, that is what I’ve decided to do.”

The release comes one year after the launch of the distillery’s flagship single malt whisky: The Cotswolds Single Malt Whisky.
