Nine Lives launches sustainable cocktail list

London bar Nine Lives has released a new cocktail menu with a “greater focus” on sustainability and a reduced carbon footprint.

The new list consists of signature cocktails, sharers and “remixed” classics. It features homegrown ingredients such as fresh herbs.

Nine Lives has taken classic cocktails from each spirit category and served them three ways: in their original form; as a Nine Lives variation; and a third version created by leading bartenders from around the world.

Highlights of the menu include the “rich and fruity” Kelross Daiquiri – a “low-carbon-footprint twist” on the classic serve – made with Ron Zacapa rum, bramley apple juice and Hackney honey; and the “herbaceous and complex” Ephemeral, a combination of Somerset cider, brandy, cherry, hazelnut, lemon, and parsley.

Nine Lives was launched in summer 2017 by Allan Gage, Emma Hutchison and Tom Soden, founders of drinks agency Sweet&Chilli. The agency worked with drinks giant Diageo to create The Resourceful Bartender, one of the training modules at its World Class Studios.

Tom Soden, co-founder of Nine Lives, said: “After delving deeper into sustainability both through Nine Lives and The Resourceful Bartender World Class Studios content Sweet&Chilli developed for Diageo, we found that a key element of sustainability not addressed enough is the carbon footprint of distribution.

“The new menu at Nine Lives looks to address this issue by reducing our carbon footprint of the products we use. Whether this is of Amer liqueur from The Bloomsbury distillery or sage grown in our back garden.

“We’ve looked at the product, the location and the packaging of each ingredient on the menu to ensure we’ve reduced the carbon footprint as much as possible.”
