One Time Gin owner plans distillery in Herts

The founder of UK-based gin subscription service One Time Gin has revealed plans to open a distillery in Ware, Hertfordshire.

James Grant, who founded One Time Gin in 2016, is planning a new venture called the Ware Hous Distillery.

He has converted a warehouse barn on Dowsetts Farm in Colliers End into a distillery – adding a copper still from Portugal.

The One Time Gin subscription club creates limited-edition expressions in partnership with distilleries in the UK. Previous releases include Flowerbomb gin, made in collaboration with Victory London Distillery and Red Leaf Gin, made in partnership with Langley Distillery.

Subject to planning approval, the team plan to open the distillery in June 2018 with the first products expected mid-to-late summer.

The distillery will also work with artist Manasses Machado, who will create the bottle designs for the products.

“Over time, we’ve become more and more involved in the design of the products,” said Grant.

“We’ve learned so much about the process behind creating premium gin; from the distilling, to the recipe creation and packaging design. We’ve had tonnes of feedback from our tight-knit community about what they do and don’t like. The products released from the distillery will be truly community driven.

“The time has come to bring production of our products in house. Creating gin with other distilleries has been a great way to get started. But, nothing compares to the pride of knowing you made the product from start-to-finish yourself.”

The Chiltern Hills in Hertfordshire welcomed its first operating distillery in 2015 following a crowd-funding campaign.
