Sun King Brewery begins building US$5m distillery

US-based Sun King Brewery has started work on a new US$5 million distillery in Carmel, Indiana, which will produce moonshine, rum, gin and whiskey.

The 15,000 square-foot distillery and tap room is scheduled to open in spring 2018 and will have the capacity to produce 10,000 gallons of alcohol a year through the firm’s new 250-gallon still.

Dave Colt, Sun King co-founder and head brewer, will also take up the position of head distiller at the new site.

Once operational, consumers will be able to sample the distillery’s moonshine, rum and gin, while the company’s small batch whiskey matures for several years.

Colt said: “All or our spirits are inspired by artisan Indiana farmers and producers, and we plan to showcase their harvest in our infusions, spirits and cocktails.

“We’re also exploring a wide variety of local restaurants that will offer delicious menu pairings that will complement our spirits.”
