Austin welcomes ‘first’ whiskey distillery since Prohibition

Grain-to-glass producer Still Austin Whiskey Company has built the “first” whiskey distillery in the Texas capital city since Prohibition.

Located at The Yard at St. Elmo, the “urban distillery” intends to create both “classic and innovative” whiskey expressions, including Bourbon, small-batch specialty spirits, and seasonal offerings.

The Still Austin Whiskey Company team plan to mash, ferment, distill, barrel and bottle all products at the distillery using a 45-foot Bourbon still and copper pot still, with a focus on the surrounding agricultural community through the use of local grains and limestone-filtered water.

As well as constructing a tasting room, events space and dedicated whiskey garden, the distillery will provide guests with the opportunity to participate in a Distill Your Own Barrel workshop.

In addition Still Austin Whiskey Company has launched Stash, a bespoke barrel reserve programme that includes regular tastings, events and gatherings.
