Ryan Chetiyawardana has announced the first step in a two-stage transformation of White Lyan
The new space will “supe-up” classic cocktails “with a sprinkle of Mr Lyan magic”, presenting via an “accessible, jargon-free menu” that guides guests according to their flavour preferences.
A statement explains “the bar will be a showcase of what happens when you take a team that loves classics, and has exceptional experience working within both traditional cocktail bars and pushing the boundaries of accepted drinks industry norms”.
Sample drinks include the Dog’s Nose Clover Club, containing Chambord, ‘gin sizzurp’, lemon, and Guinness; Queen’s Park, featuring Bacardi Carta Blanca and Ocho, lymon, green herbs Peychaud and avocado leaf bitters; and Man on Fire, which combines Dewar’s 12, Ancho Reyes, Del Maguey Vida, lemon, and pine honey.

While White Lyan in its current form serves pre-batched cocktails and has a strict ‘no perishables’ policy, this looks set to change for the new format, in which ‘there may even be a shaker, and some cubes of ice’.
Set to open on Friday 14 April, the new space will maintain its original bare brick walls, neon signage, leather booths and the signature pole.
