Glendalough Distillery launches ‘all-seasons’ gin

Ireland’s Glendalough Distillery has created an “all-seasons” gin that captures the changing environment of its valley location, called Glendalough Wild Botanical Gin.

Glendalough Wild Botanical Gin is built on a base of classic gin botanicals alongside freshly foraged wild botanicals from the valley, taking inspiration from Glendalough’s surroudings.

The distillery is located in the Glendalough valley in County Wicklow on the east coast of Ireland.

Prior to the new offering, the distillery have produced four seasonal gins in order to reflect the way that the valley grows and evolves over the course of a year.

The new gin was created as bars found that with the seasonal gins they had to update their cocktail lists regularly, with the creation of the “all-seasons” gin solving this problem.

Geraldine Kavanagh, County Wicklow native and Glendalough’s forager, took charge of the botanical recipe, along with their harvest. The botanicals are infused in neutral spirit overnight before distillation the following day.

Master distiller Rowdy Rooney then utilises the Glendalough Holstein still to carefully distill the infusions before diluting the spirit to 41% abv using Wicklow mountain water.

It is described as starting with “spring-like notes” on the nose, “distinctly juniper and citrus tones”, before moving through to “summer flowers, then autumn fruits before finally resting on winter spice”.

Glendalough Wild Botanical Gin is recommend served with a premium tonic and garnished with either a mint sprig and orange slice or rosemary and a slice of pink grapefruit.
