Dalmore celebrates master distiller with 50yo
Highland distillery The Dalmore is to release an “exceptionally rare” Champagne-finished 50-year-old single malt to mark master distiller Richard Paterson’s 50th year in the industry.

Paterson is credited with “pioneering the art of maturation and cask finishing” which the distillery says has been “instrumental” to the The Dalmore’s success.
Building on the celebrations surrounding Paterson’s milestone, The Dalmore 50 is the result of a partnership with four luxury houses: Champagne house Domaine Henri Giraud, crystal manufacturer Baccarat, jewellery house Hamilton & Inches and bespoke furniture company Linley.
The liquid was matured in American white oak, Matusalem Oloroso Sherry casks from the Gonzalez Byass Bodega, and port Colheita pipes from the Douro region of Portugal, before it was finished for 50 days in “rare” casks from Domaine Henri Giraud – one of the only Champagne houses still maturing their wines in casks.
The expression has aromas of caramelised orange segments, vanilla pods and sweet sultanas, with tangy thick cut marmalade, roasted coffee and moist chocolate cake on the palate and crushed almonds, black morello cherries and soft liquorice on the finish.
The Dalmore 50 is presented in a crystal decanter held within a presentation case crafted by Linley.
Each decanter is adorned with a solid silver stag, created by silversmiths Hamilton & Inches, holder of The Royal Warrant.
“This is a special year for me so I chose to finesse this whisky in a Champagne cask, as this magnificent drink is synonymous with celebratory occasions,” said Paterson.
“Bringing the Champagne together with Matusalem oloroso sherry and port is perhaps the greatest example to date of our ability to innovate in both maturation and cask finishing while preserving the signature flavours of The Dalmore.
“This whisky is exceptional, as are the luxurious and sophisticated finishes applied by the craftsmen at Domaine Henri Giraud, Baccarat, Linley and Hamilton & Inches. They are true masters of their art and it is a pleasure to have worked with them to bring the 50 year old to life in such a magnificent way.”
In total 50 decanters will be released, hand-filled on order, bottled at 40% abv.
