Baker opens cocktail cake business in Scotland

An Edinburgh baker has opened a mobile cake business that specialises in cocktail-flavoured cupcakes.

Henderson’s mobile bakery turns Cosmopolitans and Mojitos into bite-size cupcakes

Lesley Henderson has launched Eat Me Ltd, a mobile bakery turning cocktails into a range of cakes using alcoholic ingredients, with plans to open a shop in Edinburgh.

Using just two units of alcohol per 12 cakes, her treats are individually handmade and can be made stronger if requested.

Cake creations include ‘Follow the White Rabbit’, made from Feeney’s Irish Cream, Kahlua and milk, and ‘Cheshire Cat’, a cupcake containing a mixture of NB Vodka, triple sec and cranberry juice, based on a traditional Cosmopolitan.

Henderson told Herald Scotland: “I’ve always loved baking cakes and drinking cocktails, so I decided to mix the two together and create my own business.

“It was an idea both myself and my partner Brian came up with and so far, it’s proving to be quite popular.

“I know there are a few bakeries that do the odd cocktail cupcake, but that is all my business focuses on.

“However, if someone wants a personalised cake with no alcohol in it, I can bake that too.

“I’m currently looking for a premises to open up a shop, and once I secure that I’m planning to run the business full-time in Edinburgh.

“I’m very mobile at the moment, I bake the cakes at home and deliver all over the UK.”

Edinburgh Gin and NB Gin have supplied various ingredients for the cupcakes, while Mother’s Original Gin & Draft bar in Edinburgh have been serving her creations as part of their afternoon tea.

Last month, Warner Leisure Hotels launched an ice cream van, offering alcoholic-flavoured ice creams and sorbets.
