Sydney distillery first to open for 160 years

A new Sydney distillery thought to be the city’s first in more more than 160 years is scheduled to officially open next month

Archie Rose Distillery will officially open in Sydney in March

The Archie Rose Distilling Co. in Rosebery, was founded by Will Edwards, who claims records show the last operating distillery in the city dates back to 1853.

He plans to distil gin, vodka and white unaged rye whisky, with a collection of aged whiskies and other spirits planned for a later date.

Edwards’ team comprises head distiller Joe Dinsmoore, sales and marketing manager Nigel Weisbaum and production manager Dave Withers.

He continued to explain that Archie Rose was inspired by the recent craft spirits movement and abundance of small independent distilleries launching around the world.

“This has been a long time coming and we feel absolutely privileged to be part of it,” said Edwards. “It has been as much a journey of discovery and learning as it has about sharing.

“The creation of fine spirits by hand demands an in-depth understanding of the intricate processes, timing and chemistry.

“We can’t wait to share our love of spirits and distilling with Sydney.”
