Bristol restaurant rolls out house-made vermouth
By Becky PaskinA restaurant in Bristol, UK, is making its house-made vermouth more widely available after becoming frustrated over the absence of quality products on the market.
The Collector Vermouth is riding the wave of new spirits produced by bars in-houseThe Ethicurean Restaurant in Wrington developed a house vermouth made with 20 botanicals, wine and caramel to suit the style of drinks the bar team wished to serve in-house.
The team spent five years researching the botanicals for its vermouth, and after witnessing strong demand from patrons at the restaurant, decided to batch produce and bottle the liquid for sale off-premise.
Named The Collector, the vermouth includes a selection of herbs gown in the restaurant’s walled garden, as well as wild ingredients from the surrounding area.
It is described as having notes of gentian, dried citrus fruit, roasted chestnuts and marmalade.
It is being rolled out this month for an RRP of £38, and will be available from specialist retailers.
The Collector is the latest in a series of house-made spirits and ready-to-drink bottled cocktails being produced by bars in-house.
Recent releases include Bath Gin by The Canary Bar in Bath; Alimentum Gin with Lady Grey tea and truffles for Alimentum restaurant in London; The Dorchester Old Tom Gin; 34 Scotch whisky for the eponymous London steak restaurant.
