Aged to perfection: Eagle Rare 30

Buffalo Trace Distillery has set a new precedent for ultra-aged American whiskey with the release of its oldest Bourbon expression to date: Eagle Rare 30.

With a legacy dating back to 1775, Buffalo Trace Distillery in Frankfort, Kentucky, is home to some of the world’s most celebrated American whiskey brands. Among these is Eagle Rare, which first pushed the limits of Bourbon ageing in 2023 with a 25-year-old expression, and has now done it again with a 30-year-old.

The key to maturing ultra-aged whiskey in Kentucky’s humid subtropical climate is found within the walls of one of the distillery’s experimental warehouses, Warehouse P.

The climate-controlled structure was designed to explore whether prolonged ageing can enhance American whiskey in the same way it does in more temperate climates such as Japan, Scotland, and Ireland.

The whiskeys that emerge from the warehouse are a rare testament to patience and precision, highlighting Buffalo Trace’s ability to turn ageing into a defining feature.

In doing so, the distillery is reshaping expectations of ultra-aged Bourbons.

Eagle Rare 30 – the oldest American Bourbon whiskey produced by Buffalo Trace Distillery – is the second expression drawn from barrels aged in Warehouse P. According to Buffalo Trace’s master distiller, Harlen Wheatley, the expression “is not simply about time, it is about what time can reveal.

“Ageing whiskey in Kentucky comes with inherent challenges: evaporation increases and barrel influence intensifies, which can lead to overly dry or astringent characteristics in older Bourbons,” he explains. “The environment within Warehouse P allows us to manage those effects, softening the extraction and preserving the nuanced flavours that define exceptional ultra-aged Bourbon.”

While time in the barrel plays a significant role in developing an ultra-aged Bourbon, ultimately, it is the resulting maturity of the spirit that truly enhances the flavour. The type of oak used, the level of barrel char, temperature, humidity, and the placement of the barrel all influence how the whiskey evolves over time.

“Through careful monitoring over time, we’ve seen how controlled, extended ageing can bring a whiskey to a point of exceptional smoothness and layered complexity,” Wheatley adds. “Eagle Rare 30 is a clear expression of that. It is distinctive in a category where nuance is hard-earned.”

At 50.5% ABV, Eagle Rare 30 presents a complex aromatic profile with layers of baked cherry, brown sugar, caramel, honey, subtle nuttiness, warm tobacco, and well-integrated oak, with a hint of smoke. On the palate, the whiskey is rich and expansive, with flavours of sweet aged stone fruit and caramel. The long and velvety finish transitions from sweetness to a gentle smokiness, complemented by a refined oak character that remains smooth and balanced.

Jake Wenz, president and CEO of Buffalo Trace Distillery and Sazerac, says: “Eagle Rare has long been a study in patience and progression. Eagle Rare 30 brings that philosophy into focus, revealing the

depth, character and distinction that only time can achieve. It represents a new benchmark for American whiskey and affirms Bourbon’s place among the world’s most exceptional spirits.”

The deep mahogany-coloured Bourbon is presented in a hand-blown 750ml crystal decanter, surrounded by a hand-hammered gold-plated eagle’s wing and a sculpted glass eagle inside. The custom display box opens to unveil outstretched wings framing the Bourbon, reflecting the rarity, distinction, and craftsmanship of the release.

A true rara avis of American whiskey, Eagle Rare 30 is now available in limited quantities through Sazerac’s global distributor network for retailers, bars, and restaurants, with a recommended retail price of US$12,500.
