Viajante87 launches five-part cocktail menu

Led by bar director Pietro Collina, the new offering is an evolution of the bar’s opening menu, which launched in 2023 and showcased Latin American traditions, ingredients, and hospitality culture.
As with its first menu, Cocktail x Culture is structured around ‘the stages of an adventurer’s transformation from visitor to local when immersing themselves in new cultures’.
It is divided into five sections: ‘Be Comfortable’, ‘Be Curious’, ‘Be Courageous’, ‘Be Present’, and ‘Be Involved’.
Many ingredients on the menu were gifted to the bar during its Culture Exchange campaign, which saw some of Latin America’s best bars take over the venue throughout 2024. The campaign will be brought back this year, kicking off on 23 February with a takeover by Buenos Aires’ Tres Monos and Niño Gordo.

Be Comfortable features ‘approachable yet subtly innovative serves’, such as the Açaí Ramos, which is a riff on the Ramos Gin Fizz where the gin is replaced by smoky mezcal. Açaí adds depth, contrasting with creamy banana.
The Paloma Café adds coffee to the classic, creating a balance of ‘refreshing sharpness and rich roasted warmth’.
The Be Curious section focuses on unique Latin American ingredients through familiar serves. Vino Tinto is a red wine Spritz elevated with Mendoza Chinato, a vermouth-style fortified wine from Argentina.
The Horchata Colada combines rum with coconut horchata and yoghurt, while the Oaxacan Old Fashioned blends Tequila and mezcal with chilli negro and pechuga caramel, finished with a Chicatana ant shard garnish.
Be Courageous steps further into the uncharted with the Guava Fresca – a drink based on the Latin American pairing of guava paste and cheese – which brings together Tío Pepe Sherry, La Venenosa Raicilla, and guava cordial.
Domingo El Cali pays tribute to Colombian chef Catalina Vélez, blending soursop with sotol and a hint of corn husk ash.
The Be Present section celebrates communal drinking through sharing cocktails, designed to evoke the ‘warmth of Latin American hospitality’.
The final section, Be Involved, is an interactive, bespoke cocktail journey, with guests invited to collaborate with bartenders to create a personalised drink.
The Cocktail x Culture menu features hand-drawn illustrations of Latin American ingredients and explores the origins, flavour profiles, and cultural significance of each element.
The bar’s selection of Tequilas, mezcals and rums are depicted on maps, emphasising terroir.
