The Cambridge debuts sustainability website
By Lauren BowesShaken Leaf, created by the team behind Paris’ The Cambridge Public House, is a digital platform designed to ‘empower’ bartenders worldwide with sustainable practices and resources.

The bar achieved B Corp status in July last year, however co-founder Hugo Gallou told The Spirits Business that the journey was more important than the accolade.
Shaken Leaf is a collaborative, open-source platform that aims to make sustainable bartending practices accessible.
The project follows on from the bar’s 2023 Community Plan, which saw the team tackle some of the 17 sustainable development goals underlined by the United Nations.
The digital platform will provide practical tips, case studies and expert interviews to help bar teams implement sustainable practices in their venues. Topic areas include waste reduction and environmentally friendly ingredients, as well as ways to optimise resources and integrate sustainability into daily operations.
Tips can be filtered by area, such as community, creativity, drinks, education and producers. These are sourced from both The Cambridge team and global bartenders, including Luke Whearty of Melbourne’s Byrdi and Kristine Gutierrez of New York’s Mister Paradise.
The website also includes a cocktail database, with each recipe given a sustainability score.
Visitors can also read about The Cambridge’s journey to B Corp certification and its environmental, social and governance report from 2023.
Co-founders Hyacinthe Lescoët and Gallou said: “As a team, we’ve always believed in supporting our community and leading positive change. Shaken Leaf is our way of sharing the knowledge we’ve gained and inspiring a new wave of eco-friendly bartending practices.
“We can’t wait to see the impact this has on our community, and we’re excited to continue helping those in the industry.”
