Glasgow’s Absent Ear unveils art-inspired menu

Absent Ear bar in Glasgow, Scotland, has created a menu that blends ‘cutting-edge mixology with immersive Scottish art’.

The speakeasy-style bar has spent two years creating a two-floor digital gallery to coincide with the menu, which is titled Maximalism & Minimalism. The bar’s general manager and head of drinks development Liam Grogan is behind the ‘multisensory drink adventure’.

Grogan said: “This menu is the culmination of everything we’ve been working toward as a team. Absent Ear has always been about bold, creative flavours, and this time we’ve pushed ourselves to make drinks that aren’t just great cocktails – they’re experiences.

“Whether it’s a minimalist creation like Fragola-Rama or a maximalist spectacle like Roobarb & Custard, this menu represents the absolute best of what we do.”

Fragola-Rama is a cocktail inspired by bespoke artwork by Glasgow artist Sophie Rowan, made with Diplomático Planas rum, manzanilla Sherry, and ‘Strawberry³’ (cryo-concentrated strawberry, wild strawberry liqueur, and lacto-fermented strawberry).

Another cocktail, Roobarb & Custard, is inspired by an animated TV show from the 1970s called Roobarb, and features forced rhubarb oleo, rhubarb amaro, peach aperitif, and peach bitters. The drink is topped with a custard cream foam and colourful sprinkles, with a 10p mix bag of sweets on the side.

Meanwhile, Two & a Choux is inspired by Glasgow artist Rory Kennedy’s piece, Coffee, and features coconut, coffee, birch caramel, and a pastry cream foam.
