Shingo Gokan opens Madrid bar Devil’s Cut

The site in Madrid’s Las Letras district was formerly home to Casa Pueblo bar, which opened in 1983 and closed in February 2024.
Gokan operates 12 bars across the world.
Devil’s Cut is inspired by Gokan’s career, which began at Angel’s Share, a New York bar where he was head bartender for 10 years, and continued through his bars in Asia.
The menu will be divided into three: Angel’s Classics, which are a selection of Gokan’s best drinks from the 2000s; some of the most popular cocktails from his Tokyo, Shanghai, Okinawa and Hong Kong venues; and the Devil’s Signatures, which are unique creations for the new bar and are inspired by Gokan’s passion for Sherry.
His interest in the fortified wine began over a decade ago, when he first visited Spain and the wineries of Jerez. He used Sherry in his winning cocktail at the Bacardí Legacy Cocktail Competition in 2012, which springboarded his career.
Devil’s Cut will also offer wine and food, with the latter led by chef Atsushi Furukawa, who previously worked at Gokan’s venue The SG Tavern in Tokyo. Plates will reinterpret Japanese cuisine through Spanish ingredients.
