Holyrood debuts Sherry Cask Edition rum
Edinburgh’s Holyrood Distillery has expanded its Elizabeth Yard range with a new Sherry cask-finished rum that blends liquid from three producers.
The new blend is made from rum sourced from three independent distilleries across the globe: single-estate molasses rum from the Philippines, high-ester pot still rum from Ghana and cane juice rum from Vietnam.
The 42.5% ABV liquid is then finished in Sherry casks at Holyrood Distillery in Scotland.
Distillery manager Calum Rae said: “Our Sherry Cask Edition rum offers a more accessible option for people wanting to explore premium rum.
“With notes of foamy bananas, raisins and red fruits, this liquid is perfect sipped neat, and stands out like an island in the storm when mixed into a cocktail.”
On the nose, the liquid carries notes of bananas and syrup with hints of creamy boiled sweets and pineapple.
The palate brings flavours of treacle, marzipan and raisin alongside Demerara sugar and a hint of candy floss.
The bottle shape pays homage to a classic navy rum flagon and features a dazzle design that was historically applied to naval ships as a form of camouflage.
The packaging design was inspired by the origins of Royal Elizabeth Yard and its link to the nearby naval bases on the Firth of Forth at South Queensferry.
Priced at RRP £34 (US$43), the Sherry Cask Edition will be available to buy from the Holyrood Distillery website and shop from tomorrow (9 February).
Holyrood Distillery’s aim with Elizabeth Yard is to source rums from producers around the world that use 100% locally grown sugarcane.
The Edinburgh-based distiller finishes its rums in oloroso and PX Sherry casks, as well as first-fill and new American oak casks.
Elizabeth Yard – Traveller Distillery – Ungrogged American Oak No 1 Char Octave was named last year’s Rum & Cachaça Taste Master — the highest award in the competition.
Last month, Holyrood Distillery secured more than £2 million (US$2.5m) in funding to support its global expansion plans.
Holyrood also produces gin and released its first whisky last year.
