Atlas launches Simple Pleasures cocktail menu
Singapore-based bar Atlas has unveiled its new drinks menu, which explores the origins of four classic cocktails.
The Simple Pleasures cocktail list is focused on four classic serves: Martini, Sour, Old Fashioned, and the Champagne Cocktail.
Each one has been given a dedicated chapter that gives insight into the cocktail’s history, followed by five riffs on that particular style. One of the recipes is Atlas’s signature serve, plus four ‘modern’ interpretations, including a non-alcoholic option.
Lidiyanah ‘Yana’ K, who was appointed head bartender last year, developed and designed the new menu with the Atlas team.
In order to give guests maximum transparency, each drink’s alcohol strength has been listed.
The Martini category includes the Montgomery cocktail (21.6% ABV and priced at S$24/US$18). It is made using mint tea-infused vodka, dry vermouth and absinthe, garnished with olive oil caviar.
All four chapters open with a Milk Punch-style drink. In the Sours category, guests can sample Ode to Odyssey (7.2% ABV, S$22/US$16). This is the bar’s take on the Ramos Gin Fizz. Made with an egg white substitute, the cocktail includes Australian Shiraz gin, clarified milk, and toasted raisin-cinnamon syrup.
The alcohol-free choices include Hope on the Horizon, which can be found in the Champagne Cocktail section of the menu. This 0% ABV version of the Champagne Cocktail incorporates kombucha and yuzu to mimic the original drink’s flavours.
Meanwhile, the Atlas French 75 is served at 21.1% ABV and is finished with a table-side pour of kumquat, pomegranate syrup and lime juice.
