Lark Distillery opens whisky experience

Tasmania-based Lark Distillery Company has revealed The Still, a whisky complex comprising a bar, tasting room and shop.

The ‘luxury’ whisky experience is located in the Old Mercury Print Room in Argyle Street, Hobart, Tasmania. The venue is set to open in the coming months, during Australia’s springtime.

Dan Knight, head of hospitality at Lark Distillery, said: “The Still will be an experience like no other. Whether you are newly curious or extremely passionate about the Tasmanian spirits community, this space will be the perfect jumping-off point for your exploration into world-class, local whisky.”

The venture is said to be a celebration of Tasmanian whisky community, with more than 150 local whiskies available to purchase by the measure or as a bottle.

Husband and wife founders Bill and Lyn Lark established Lark Distillery in 1992, with an aim to produce a local single malt in Tasmanian conditions. Since the distillery’s founding, Tasmania has seen ‘significant growth in the distilling industry’ over the past 30 years, according to the brand.

The original Lark Distillery copper will still be used by Bill Lark at the distillery’s original home on Davey Street, as a nod to the history of both Lark and the Tasmanian whisky industry. This still is said to be the template and inspiration for many of the 57 licensed distilleries operating in Tasmania today.

Knight added: “Our flagship cellar door on Argyle Street, Hobart, will remain open for those who want to experience the full Lark stable, and as trailblazers of the local whisky scene, we’re excited to shine a spotlight on some other incredible drams from our home state over at The Still”.

The Still comprises: a full bar area, serving wines, cocktails and beers; a tasting set up; a whisky lounge with handmade furniture made from locally sourced timber; and a shop ‘for the best drams in Tassie’.

The whisky experience will be open to the public from late spring in Australia this year, from 11am-9pm from Sunday-Wednesday, and 11am-midnight from Thursday-Saturday.
