Empirical Spirits teams up with bartenders on bottled cocktails

Copenhagen-based Empirical Spirits is supporting the on-trade during the covid-19 outbreak with the launch of a collaborative pre-batched cocktail series with leading bartenders, including Ryan Chetiyawardana.

Danish distillery Empirical Spirits has launched the series with bartenders and venues to provide support for the hospitality industry. The spirits producer hopes to “bridge the gap between consumers and bars during the global lockdowns of cities” as a result of the covid-19 pandemic.

A percentage of the sales from each of the collaboration bottles will be donated to the bartender’s chosen charity, beginning with Chetiyawardana’s choice, Hospitality Action.

Chetiyawardana, the award-winning bar operator of venues such as Lyaness and Cub, teamed up with Empirical Spirits in 2019 on the Onyx blend, a spirit made with Japanese ingredient koji, black walnut, hibiscus and kombucha.

The first product in the new pre-batched cocktail range will be ES x Lyaness, which is based on a Martini. It mixes cold-infused pineapples with Onyx and olive brined Helena from the Empirical Spirits range.

In addition to the collaboration with Chetiyawardana, the new bottled range will include Empirical Spirits’ own blends, the Pony Negroni and Bonita Applebum.

Made using Empirical Spirits’ Fallen Pony blend, Pony Negroni is made from a quince spirit blended with a bitter apéritif and red vermouth for an “Empirical twist on the Italian classic”.

Meanwhile, the Bonita Applebum comes from Empirical Spirits’ newest team member Sasha Wijidessa, who joins from Singapore cocktail bar Operation Dagger.

The bottling is also produced using the Fallen Pony blend, along with pineapple, banana, lemon zest and white chocolate. The pre-batch cocktail takes inspiration from American hip-hop group A Tribe Called Quest’s song of the same name.

The series will continue with more in-house blends created alongside bartenders and venues from across the world.

Pony Negroni, Bonita Applebum and ES x Lyaness are each priced at €45 (US$49) per 375ml.
