Salcombe Distilling moves into rum with Wolf Rock

Salcombe Distilling Co is based in the English coastal town of Salcombe in South Devon and produces a range of gins, including a pink expression.
Wolf Rock rum is named after a nautical landmark at the entrance to Salcombe’s estuary, which marks the start and end of the 19th-century voyages of the Salcombe Fruiters schooner ships.
According to the distillery, the ships were known for carrying fresh fruit and spices back from exotic lands and often travelled to the West Indies to acquire sugar, molasses and rum. The spirit was stowed on these ships, protected by coconuts, as it made the journey back across the Atlantic.
The first batch of Wolf Rock rum is limited to only 200 bottles and has been made with molasses, unrefined sugar, a blend of yeasts, and distilled in traditional 60-litre copper pot stills.
Salcombe Distilling Co said that no sugar or extra colouring has been added to the rum after distillation.
It is described as having a light golden colour and a “natural sweetness”. On the nose, it has hints of sweet butterscotch “complemented by flavours of warm vanilla, mellow oak and hints of banana with an endearing, light chocolate finish”.
The 42.4% ABV rum is recommended served over ice or in a Salcombe Sherry cocktail.
Salcombe Rum Wolf Rock is priced at £50 (US$65) per 500ml bottle.
Last month, Salcombe Distilling Co exceeded its crowdfunding target of £800,000 (US$1 million) in under 24 hours.
