Cocktail stories: Cry me the Moon
Cry me the Moon was originally a truffle-infused twist on the Martini. It has since become an aromatic cocktail packed with fruity and savoury flavours.

“I am a minimalist when it comes to cocktails,” says Suwincha Singsuwan, head bartender at Bangkok’s Rabbit Hole. “With Cry me the Moon I was trying to create something elegant but simple.”
Singsuwan describes the Cry me the Moon as being “dry with the aroma of truffle” and explains how despite starting out as a white truffle‐infused twist on the Martini, the cocktail was changed in order to cater to guests’ tastes.
Singsuwan says: “We got some guests that couldn’t drink straight alcohol, so that was when I made Cry me the Moon. It is made with truffle oil‐washed gin, pandan syrup, citric acid and apple juice that is cooked sous‐vide with long pepper, orange and lemon skin to add more dimensions to the cocktail.”
Singsuwan says she went through several processes to “get the most aroma into the cocktail”, including creating the modified apple juice used in the cocktail, which makes use of waste from the bar such as lemon peels left over after juicing, and cuttings from orange garnishes.
To make the fat‐washed gin that forms the backbone of the cocktail, Singsuwan heats 30ml of white truffle oil together with a whole bottle of gin. The mixture is then frozen and filtered before being frozen again ahead of service. Singsuwan says that she decided to use a fat‐washing process because it would “add the aroma of truffle without changing the flavour”. Preparing all the ingredients that go into Cry me the Moon takes six hours.
Having been on the menu since the bar opened in 2016, Singsuwan says Cry me the Moon has become Rabbit Hole’s best‐selling drink: “It is the most‐sold cocktail in the past three years.”
Rabbit Hole has earned spots on the ‘world’s best bars’ lists and has received a host of industry awards.

Rabbit Hole’s Cry me the Moon
Ingredients:
45ml White truffle oil‐washed gin
45ml Modified apple juice
15ml Pandan syrup
10ml Citric acid solution
Method: Add all the ingredients to a shaker and shake. Strain over ice and garnish with a dehydrated orange slice.
