With Trash Tiki founders Kelsey Ramage and Iain Griffiths opening their first permanent bar and Manchester Gin setting up a new drinking den, September proved to be a popular month for new openings.

Manchester Gin opened Three Little Words in September

September saw new venues springing up in London, New York, Sydney and Manchester – so there were plenty of new spots for cocktail enthusiasts to sip and savour the latest signature serves.

Amor Y Amargo, New York

New York bitters bar Amor y Amargo opened its second venue last month, taking over a site in neighbouring Brooklyn.

As with the original East Village venue, the Brooklyn bar focuses solely on amaro, bitters, vermouth and spirits, and only serves stirred drinks.

The new space boasts 20 seats inside across elevated benches, high-top tables and bar stools, as well as an outdoor patio, set to open at a later date.

Supernova Ballroom, Toronto

The duo behind travelling waste-reducing pop-up Trash Tiki, Kelsey Ramage and Iain Griffiths, have opened Supernova Ballroom in Toronto.

Opening in a 1920s-style building, Supernova Ballroom promises a “dazzling disco party” with a 1970s colour palette and artwork by Kisira Hill.

The cocktail menu at Supernova Ballroom will champion the duo’s conscious approach to cocktail making and is divided into sections: Toppers, featuring light fizzy drinks; Wild Airs, which includes house-fermented cocktails; Seventy Fives, which comprises French 75 variations; and House Bubbles, offering house-carbonated drinks on tap.

London Cocktail Club Clapham, London

London Cocktail Club has ventured south of the river for its latest site, which was inspired by a selection of the biggest blockbuster movies.

Opening in Clapham, the group’s latest bar features booths themed around films such as Star Wars and Pulp Fiction, as well as artwork from an array of films adorning the walls.

Three Little Words, Manchester

Three Little Words opened in the Grade-II listed railway arches in Manchester city centre this month.

The new bar is the sister venue to Manchester Gin’s recently-opened distillery and will offer original and classic cocktails served up alongside a seasonal food menu that takes inspiration from the botanicals found in Manchester Gin.

The bar’s inaugural menu is inspired by “lust, rapture and devotion” and uses different flavours to evoke the “excitement and freshness” of falling in love.

Mixtape, Los Angeles

Los Angeles restaurant and bar Mixtape is a collaboration between restaurateur Jeremy Fall and a group of musicians.

Everyone involved in the new venue has contributed something to the space, such as artwork, curated playlists, uniform designs or collaborative dishes.

Mixtape’s menu is inspired by the “diverse ethnic background” of LA and uses ethically-sourced ingredients and local farmer’s market produce.

The Cumberland, Sydney

Opening in the heart of Sydney suburb Manly, the Cumberland serves a selection of more than 250 whiskies, natural wine, craft beer and an extensive themed cocktail menu.

Named after the Parish of Manly Cove in the county of Cumberland, the bar features vintage furnishings, marble bench tops, hand-carved sandstone blocks, original convict clay brickwork, reclaimed timber and a series of antique brass and copper accents.

Drinks on offer include the Lilly Pilly Sour, made with lilly pilly, lemon myrtle tea, gin, lemon and aquafaba, and the Camden, which combines Sheep Whey Vodka, wild olive leaf tincture, virgin olive oil and vermouth.

Swizzle Rum Bar & Drinkery, Miami

The team behind Employees Only Miami has opened Swizzle Rum Bar & Drinkery in Miami’s Stiles Hotel.

Inspired by classic and contemporary cocktails, the drinking den boasts a “New York city vibe” and a selection of 150 rums.

Drinks on offer include the bar’s take on a Missionary Downfall, made with rye vodka, St Germain, pineapple, sugar, lemon and tonic water, and the Newburgh Sour, which is made with Scotch whisky, black tea-infused Amaro Montenegro, Demerara syrup, lemon juice and egg white.

Colours, London

Opening in London’s Hoxton Square, Colours is a new multi-arts bar and club boasting food, cocktails and a host of diverse events.

Alongside a food menu of chicken wings, burgers, sandwiches and sides, Colours will serve cocktails such as the Gold Negroni, which combines Portobello Road gin, Suze and Sacred English Amber vermouth, and the Chocolate Orange Espressotini, made with Tom of Finland vodka, Fair Café liqueur, Mozart Pumpkin liqueur and espresso.
