Chef Justin Sutherland competed in the 16th season of Bravo’s Top Chef competition, and has also worked as a culinary consultant for Allianz Field, and as managing partner of Madison Restaurant Group.

The release by Tattersall and Sutherland marks the first whiskey in the distillery’s new range: the Signature Series.

To create the Justin Sutherland Signature Series whiskey, Sutherland worked with Tattersall head distiller Bentley Gilman, and founder John Kreidler, to select a blend of three different straight, single malt whiskeys that were aged for more than two years in Minnesota white oak barrels.

The individual single malts selected comprised 60% mesquite-smoked, 30% applewood-smoked and 10% chocolate-malted straight barley whiskeys.

The mash bill for each whiskey was made up of 90% malted barley and 10% smoked malt.

Bottled at 55% abv, the expression is said to have notes of earthiness, barbecue and chocolate undertones.

It will be available from a selection of Sutherland’s restaurants, including Handsome Hog, Ox-Cart Arcade and Rooftop, The Fits, Public Kitchen and Bar, Gray Duck Tavern, Fire and Whiskey, and Pearl and the Thief. It will be priced at US$49.99 per 750ml bottle.

Sutherland commented: “It is a thrill to have worked with the Tattersall team to create such an amazing whiskey. I can’t wait to toast and share drinks of my whiskey with friends, fellow whiskey enthusiasts and guests in my restaurant.”
