The Cirque du Soleil-inspired cocktails includes the Tropical Trapeze, made with Hendrick’s gin, cream de banana, lime juice, hibiscus syrup and peach bitters; and the Drum Dance, which combines seven-year-old Havana Club rum, grenadine syrup, lime juice, clementine and cinnamon juice, Koko Kanu, Angostura bitters and a lime, cherry and mint garnish. The cocktails are priced at £9 and £9.50 respectively.
Both serves will be available for those ordering from the venue’s set menu, and accompanying dishes include Bang Bang Chicken, made with crispy chicken, peanut, cucumber, baby gem and radish salad, sweet chilli and peanut dressing; and strawberry ice cream, which is served with pistachios and a white chocolate sauce.
Last year, The Ivy Tower Bridge partnered with Yorkshire-based gin brand Slingsby to support Busk in London, an initiative that encourages street performers.
