New Quaglino’s cocktail menu explores history of sustainability

London restaurant and cocktail bar Quaglino’s has unveiled its latest drinks list, which aims to explore the past, present and future of sustainability.

Drinks including The Rocket have been created to represent the past, present and future of sustainability

The menu, called The Science of Sustainability, has been separated into three parts to explore the global environmental issues of the past, present and future.

From root-infused drinks that symbolise deforestation, to futuristic serves that represent space debris, the menu strives to match unusual ingredients and thoughtful flavour combinations with eye-catching presentation.

It has been devised by Quaglino’s bar team, led by bar manager Marco Sangion and head mixologist Federico Pasian.

Sangion said: “Last year we told the history and the heritage of Quaglino’s to the world through our cocktails. Today we want to promote sustainability awareness among those who follow us.”

The first section, called ‘Past’, highlights key factors in human history that have contributed to global warming.

The menu then addresses the ‘Present’, highlighting the need for sustainability and the issues that are in the news today.

Finally, the ‘Future’ section looks at new challenges society faces to battle climate change and also examines the technological and scientific advances that will help create a greener world.

For The Science Of Sustainability menu, Quaglino’s has teamed up with Hunger Project UK and food waste collection service Indie Ecology to ensure that every aspect of the menu adheres to the values of its message. The bar will also use metal and pasta made straws to reduce waste.

Ingredients: Hennessey Fine de Cognac, 10-year-old Madeira, Quaglia Liquore di Camomilla and grapefruit
