In April, SB was too busy checking out the hottest bar openings around the world to notice the first signs of summer breaking through the clouds and the days slowly getting longer.
From the latest bar from the brains behind Portobello Road gin, a cocktail bar and cabaret venue on London’s Southbank and a New Jersey drinking spot boasting the best views of the Manhattan skyline, here are our picks of the hottest new bars to open in April.

RoofTop at Exchange Place, New Jersey
RoofTop at Exchange Place is a new multi-level indoor and outdoor space boasting the best views of the Manhattan skyline and the Statue of Liberty.
The new venue can provide year-round chilled out vibes with its retractable glass roof and setting that aims to create the perfect setting for lunch, happy hour, dinner, and sunset cocktails with a view. At weekends, RoofTop turns into a day and night hot spot featuring live DJs.
The bar features spirited cocktails, a swanky self-playing piano and live entertainment on select weekends.
Tonica by The Distillery, London
Tonica By The Distillery is a new bar, kitchen and still room from the people that created Portobello Road’s The Distillery.
Set out over two floors, Tonica By The Distillery is a 100-cover restaurant and bar on the ground floor with a working still room and private event space in the basement.
The new venue from the Leelex Group will offer a number of tapas-style small plates, cocktails and signature gin and tonic serves.
Beebe’s, New York
Beebe’s is the latest venue to open on the ground floor of the Boro Hotel in Long Island City.
The new space boasts Negronis on tap as part of a drinks programme curated by former Apotheke NYC bartenders Miguel Govea and Maximilian Caraballo.
Beebe’s features geometric patterned walls, custom banquettes and a private courtyard with views across the city.
Panamerica, Singapore
Panamericana is a bold new bar and grill in the grounds of the Sentosa Golf Club, Singapore.
Owned by veteran bar consultant Julian Serna, Panamerica brings together the skills of executive chef Mathew Woon and beverage manager Ricky Paiva.
The bar’s drinks programme includes wines and Sherries sourced from California, Chile and Argentina; North and South American beers; and a slew of craft and small-batch spirits including Bourbon, rum, Tequila and pisco.
Donovan Bar, London
Donovan Bar at luxury London hotel Brown’s has reopened following an extensive refurbishment.
Donovan’s Bar has been redesigned by interior designer Inge Moore and features the largest private collection of Sir Terence Donovan’s photographs in existence.
Interiors have been refitted and the main bar has been expanded, framing a 9th century stained glass window of St George. The bar also features a newly launched cocktail menu from industry icon Salvatore Calabrese.
Candy Bar, Detroit
Candy Bar is a new cocktail lounge located in the lobby of The Siren Hotel, Detroit.
The bar features vibrant pink interiors throughout and banquettes and bar stools that pay homage to famed LA restaurant Perino’s, which was once host to Hollywood starlets.
Candy Bar boasts a thoughtful mixology program which includes drinks like The Bubble Rum, a stirred, spirit-forward, subtly herbaceous cocktail that carries flavours of bubble gum, as well as a house Martini.
Florist, Liverpool
The Florist is a contemporary new bar and restaurant in the heart of Liverpool on the site of the former Old Blind School pub.
The bar has an abundance of flowers flowing throughout the venue, including two full-size in-bloom trees and a floral photo-wall – which the bar hopes will help make The Florist the most photographed bar in Liverpool.
The Florist offers drinkers a vibrant food menu, innovative cocktail menu, nightly DJ’s and occasional saxophonists.
Peachy’s, New York
Hiding beneath New York’s Chinese Tuxedo is Peachy’s, the latest venue from Jeff Lam and Eddy Buckingham.
The 50-seater venue boasts “elixir” and “signature” cocktails, with the former being made using a number of superfood ingredients, the menu even includes details of why each ingredient is good for you.
On the side of your cocktails, Peachy’s is serving up Asian-inspired small plates and dumplings.
Proud Embankment, London
Proud Embankment has opened in the arches beneath Waterloo Bridge in London boasting Asian cuisine, cocktails, a night club and the best cabaret and circus performers from across London.
The ground floor is a seated space to enjoy the venues selection of Asian small plates, while upstairs you’ll find a cocktail lounge overlooking the stage.
Open on Thursday, Friday and Saturday nights, Proud Embankment will play host to aerial performers, magicians, contortionists, singers and can-can dancers.

House of Gin, Plymouth
A new pop-up bar from the team at Coast2Coast events showcasing the best gin Plymouth has to offer.
Taking up residence in department store House of Fraser in Plymouth, House of Gin will offer shoppers a chance to pause, sit and sip a number of different gins from around the UK.
