Marcus Wareing opens George’s Bar in King’s Cross

Famed chef Marcus Wareing has opened his newest venue at the St Pancras Renaissance Hotel in London, called George’s Bar.

Following a complete redesign of the bar at The Gilbert Scott restaurant, Wareing this week launched George’s Bar as a tribute to the St Pancras Renaissance Hotel’s original architect, Sir George Gilbert Scott.

George’s Bar sees the restaurateur apply his culinary experience to drinks-making, and hopes to showcase the team’s understanding of ingredients and flavours.

Wareing and bar manager Dav Eames are hoping to re-establish the ‘iconic’ London bar, creating an environment that is “intimate, welcoming and creative”.

Drinks on the menu have been inspired by the “unique flavours produced in the kitchen”, with each cocktail hoping to tell the story of its ingredients.

A different cocktail on the menu will be showcased each month, with the bar’s highlighted cocktail of the month kicking off in March with the Bee Keeper – made with honey from Wareing’s Melfort Farm.

The Bee Keeper combines lavender-infused Bombay Sapphire gin, with Melfort Farm honey, sloe gin, lemon, hibiscus and elderflower.

George’s Bar hopes to become a place known for “fun and frivolity; a place to enjoy world-class cocktails within the grand surrounds of one of London’s most iconic, 19th-century venues”.
